Oven-Baked Chicken Thighs with Potatoes

Instructions

Preheat Oven:
Preheat your oven to 200°C (400°F). Lightly grease a large baking dish or sheet pan.

Prepare the Chicken and Potatoes:
In a large bowl, combine olive oil (or butter), minced garlic, paprika, thyme, garlic powder, salt, and pepper.
Add the chicken thighs and potato chunks. Toss well to coat everything evenly.

Arrange for Baking:
Place the chicken thighs skin-side up in the baking dish. Scatter the potatoes around them in a single layer.

Bake:
Roast for about 40–45 minutes, or until the chicken is golden and cooked through (internal temperature 75°C / 165°F) and the potatoes are crispy on the edges.

Finish and Serve:
Garnish with fresh parsley and serve hot. Add a squeeze of lemon juice for a bright, fresh touch if desired.
