Instructions
1. Prep the Pan
Preheat oven to 400°F (200°C).
Lightly grease a large sheet pan.
2. Season Chicken
Mix olive oil, garlic, thyme, rosemary, parsley, paprika, salt, and pepper.
Rub half of the mixture over the chicken breasts.
3. Add Potatoes
Toss halved baby potatoes in the remaining herb mixture.
Arrange chicken and potatoes on the pan.
4. Bake
Bake for 20 minutes.
Remove pan, add green beans around chicken and potatoes.
Drizzle with a little extra olive oil and season with salt & pepper.
Return to oven for 15–20 minutes, until chicken is cooked through (165°F / 74°C) and potatoes are tender.
5. Serve
Garnish with lemon slices and fresh parsley if desired.
Serve hot as a complete meal.
Tips & Variations
Use bone-in chicken thighs for more flavor (increase cook time by 10 min).
Swap green beans for asparagus or broccoli.
For extra richness, drizzle garlic herb butter before serving.
