Prep the garlic and herbs
Finely mince or grate the garlic. You want it very small so it blends into the oil. -
Mix the dip
On a small plate or in a shallow bowl, add:-
garlic

Italian seasoning, basil, oregano

red pepper flakes
-
salt and pepper
-
Parmesan, if using
Pour the olive oil over the top and stir gently.
Add a small splash of balsamic vinegar or lemon juice if you like a tangy note. -

Rest (optional, but better)
Let the dip sit for 5–10 minutes so the flavors meld, especially the garlic and herbs. -
Warm the bread
Wrap bread in foil and warm in a 325°F (160°C) oven for 5–10 minutes, or lightly toast slices. -
Serve
Sprinkle with fresh parsley if you’re using it, set the plate in the center of the table, and serve with warm bread for dipping.
Variations

Cheesy version: Add extra Parmesan and a pinch of mozzarella on top, then briefly broil in an oven-safe dish.

Lemon-herb version: Use lemon juice instead of balsamic and add extra fresh herbs like basil or thyme.

Garlic-lovers version: Gently sauté minced garlic in a little of the olive oil until just fragrant, then mix with the remaining oil and herbs.
