2 lbs (900 g) beef chuck, cut into 1½-inch cubes
3 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
3 tablespoons all-purpose flour
4 cups (960 ml) beef broth
1 cup (240 ml) red wine (optional, or use more broth)
2 tablespoons tomato paste
1 teaspoon dried thyme
2 bay leaves
4 large carrots, peeled and cut into chunks
3–4 medium potatoes, peeled and cut into chunks
2 stalks celery, sliced
1 cup frozen peas
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
