No-Bake Woolworth Icebox Cheesecake

Instructions
Prepare crust: Combine graham cracker crumbs, melted butter, and sugar. Press 2/3 of the mixture into the bottom of a 9×13-inch baking dish. Reserve the rest for topping.

Dissolve gelatin: In a small bowl, dissolve lemon gelatin in boiling water. Set aside to cool slightly.

Cream mixture: In a large mixing bowl, beat cream cheese, granulated sugar, and lemon juice until smooth. Slowly mix in cooled gelatin.

Whip milk: In a separate chilled bowl, beat evaporated milk until it forms stiff peaks.

Fold & combine: Gently fold the whipped milk into the cream cheese mixture until fully combined and fluffy.

Assemble: Pour filling over the prepared crust, then sprinkle the reserved crumb mixture evenly on top.

Chill:

Refrigerate for at least 4 hours (overnight is even better) until set. Slice and serve cold.
