Directions:
Cook the shrimp:
Bring a large pot of water to a boil. Add the shrimp and cook until they curl into a loose “C” shape and are opaque throughout. (Cooking time depends on shrimp size.)
Drain and immediately transfer to an ice bath or rinse under cold water to stop the cooking.
Cut shrimp into bite-sized pieces.
Combine the fresh ingredients:
In a large bowl, mix together the chopped shrimp, celery, jalapeño, cucumber, avocado, cilantro, and onion.
Make the sauce:
In a separate bowl, whisk together the lime juice and zest, orange juice and zest, tomato juice, tomato sauce, grated garlic, hot sauce, salt, and pepper.
Assemble and chill:
Pour the sauce over the shrimp and vegetable mixture. Stir to combine thoroughly.
Cover and refrigerate for at least 1 hour to let the flavors meld.
Serve and enjoy!
Serve chilled, optionally with tortilla chips or saltine crackers on the side.
