Mexican Buñuelos

Instructions
Make the dough: In a large bowl, whisk together flour, baking powder, salt, and sugar. Cut in the butter until crumbly. Add the egg, milk, and vanilla; mix until a soft dough forms.

Rest: Cover dough with a towel and let rest for 30 minutes to make it easier to roll out.

Prepare coating: Mix sugar and cinnamon together in a shallow dish; set aside.

Shape: Divide dough into 8–10 balls. On a lightly floured surface, roll each ball into a thin circle (about 6 inches wide).

Fry: Heat 1–2 inches of oil in a large skillet over medium-high heat. Fry each buñuelo for about 30–45 seconds per side until golden and crisp.

Coat:

Remove from oil, drain briefly on paper towels, then immediately coat with cinnamon sugar.

Serve:

Enjoy warm with hot chocolate or coffee.
