A light and crispy batter that stays crunchy after frying — just like the one used at Long John Silver’s. The secret is a mix of dry ingredients and cold water that creates tiny bubbles, giving the coating that signature texture.
Ingredients (for about 1½ lbs of fish fillets or chicken tenders)
1 cup all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon sugar
¼ teaspoon paprika (optional, for slight color)
1 cup cold club soda or cold water (club soda gives extra crispiness)
For Frying:
Vegetable or canola oil (enough for deep frying, about 350°F / 175°C)
