Instructions
Preheat oven to 180°C (350°F).
Cook beef: In a large skillet, cook ground beef over medium heat until browned. Drain excess fat. Stir in taco seasoning, salsa, beans, and corn; simmer for 2–3 minutes.
Layer casserole: Lightly grease a 9×13-inch baking dish. Spread a thin layer of beef mixture, then layer tortillas, more beef, and cheese. Repeat until all ingredients are used, ending with cheese on top.
Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
Top and serve: Let rest for 5 minutes before topping with lettuce, tomatoes, sour cream, or any of your favorite garnishes.
Tips:
Swap ground beef for ground turkey or chicken for a lighter option.
Add sliced jalapeños to the cheese layer for extra spice.
Make ahead and refrigerate — just bake an extra 10 minutes if starting cold.
