Instructions
Bake the tater tots:
Preheat oven to 425°F (220°C).
Spread tots on a large baking sheet and bake until golden and crispy (about 25–30 minutes).
Prepare the BBQ meat:
In a skillet over medium heat, cook ground beef with onion and garlic until browned.
Drain excess grease. Stir in BBQ sauce, simmer 2–3 minutes.
(If using chicken or pulled pork, just heat through with the sauce.)
Assemble the nachos:
Once tots are crispy, transfer them to a large oven-safe platter or casserole dish.
Spread BBQ meat evenly over tots.
Sprinkle on black beans, corn, bacon, and jalapeños.
Top generously with shredded cheese.
Melt & finish:
Return to oven and bake for 5–7 minutes, until cheese is melted and bubbly.
Top & serve:
Add dollops of sour cream, drizzle with extra BBQ sauce or ranch, and sprinkle on fresh toppings like green onions, cilantro, and tomatoes.
Serve immediately with forks—or dig in with your hands cowboy-style!
