Preparation
Preheat oven
Heat oven to 180 °C (350 °F). Line a rectangular baking pan (about 25×30 cm / 10×12 in) with parchment paper.
Make the batter
Beat the eggs with sugar and vanilla until light and fluffy. Stir in mascarpone, lemon juice, and zest. Mix flour with baking powder and fold into the batter until smooth.
Bake
Spread the batter evenly in the prepared pan. Bake for about 20 minutes, until golden and set (toothpick test).
Glaze
Mix powdered sugar with a little lemon juice to form a smooth glaze. Spread over the warm cake and let cool.
Serve
Cut into squares or slices. Best enjoyed fresh with coffee or tea.
Optional: Top with thin lemon slices, candied zest, or a dusting of powdered sugar for decoration.
