Layered Reuben Casserole Bake

1. Prep the Oven

Preheat oven to 375°F (190°C).
Grease a 9×13-inch baking dish.

2. Make the Dressing Mix

In a small bowl, combine thousand island dressing and mayonnaise.

3. Layer the Casserole

Spread half of the rye bread cubes in the bottom of the dish.
Layer with half of the corned beef, half of the sauerkraut, and half of the cheese.
Drizzle with half the dressing mixture.
Repeat layers with remaining ingredients.

4. Top and Bake

Sprinkle caraway seeds on top (optional).
Drizzle melted butter over the top layer for crispiness.
Cover with foil and bake for 20 minutes.
Remove foil and bake for an additional 15–20 minutes until golden and bubbly.

5. Serve

Allow to rest for 5 minutes before slicing.
Serve with extra dressing on the side if desired.

Tips and Variations

Add a thin layer of mashed potatoes between layers for a twist.

Use turkey or pastrami instead of corned beef for variation.

Mix Swiss cheese with mozzarella for extra creaminess.
