Kielbasa Soup with Potatoes

This rustic, one-pot soup combines smoky kielbasa, tender potatoes, and vegetables in a savory broth. It’s simple to make, filling enough for a main meal, and tastes even better the next day as the flavors meld together.
Ingredients (6 servings)
1 tbsp olive oil or butter
1 lb (450 g) kielbasa sausage, sliced into ½-inch rounds
1 medium onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic cloves, minced
4–5 medium potatoes, peeled and cubed
6 cups chicken broth
1 tsp smoked paprika
1 tsp dried thyme (or 2 sprigs fresh thyme)
2 bay leaves
Salt & black pepper, to taste
1 cup heavy cream or half-and-half (optional, for a creamy version)
Fresh parsley, chopped (for garnish)
