Instructions
Activate yeast
In a small bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
Make dough
In a large bowl, combine flour and salt.
Add yeast mixture and olive oil. Mix until dough comes together.
Knead
Turn dough onto a floured surface. Knead for about 8 minutes until smooth and elastic.
Work in the chopped olives and herbs gently toward the end.
First rise
Place dough in a lightly oiled bowl, cover with a towel, and let rise 1–1.5 hours until doubled.
Shape loaf
Punch dough down and shape into a round or oval loaf.
Place on a baking sheet lined with parchment.
Second rise
Cover and let rise again for 30–40 minutes until puffy.
Bake
Preheat oven to 400°F (200°C).
Score the top of the loaf with a sharp knife.
Bake 30–35 minutes until golden brown and it sounds hollow when tapped on the bottom.
Cool & serve
Let cool on a wire rack before slicing.
Serving ideas
Spread with butter or cream cheese.
Use for hearty sandwiches.
Pair with tomato soup or a cheese platter.
