Hearty Slow-Cooked Beef Stew

Ingredients
2 lbs beef chuck, cut into 1 1/2-inch cubes
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
1 cup red wine (optional, can sub with more broth)
3 tbsp tomato paste
2 tbsp Worcestershire sauce
1 tsp dried thyme (or 2–3 sprigs fresh)
1 tsp dried rosemary (or 1 sprig fresh)
2 bay leaves
4 large carrots, cut into chunks
3 celery stalks, sliced
4 potatoes, peeled and cubed
1 cup frozen peas (added at the end)
2 tbsp flour + 2 tbsp water (for thickening, optional)
