Grandma’s Lime Green Jello Salad (with Cottage Cheese & Pineapple)

Instructions

Prepare the Jello:
In a mixing bowl, dissolve lime Jell-O in 1 cup boiling water. Stir until completely dissolved. Add ½ cup cold water plus ¼ cup of the reserved pineapple juice. Let cool slightly.

Mix the Base:
In another large bowl, combine cottage cheese and drained crushed pineapple.

Combine:
Pour the cooled (but not fully set) Jello mixture into the bowl with the cottage cheese and pineapple. Stir gently until everything is evenly mixed.

Fold in Whipped Topping:
Once the mixture has cooled further (but isn’t yet firm), fold in the whipped topping until smooth and fluffy.

Chill to Set:
Pour the mixture into a serving dish or mold. Refrigerate for at least 4 hours or until firm.

Serve:
Scoop and serve chilled — or unmold for that perfect retro presentation!
