Instructions
Prep the potatoes:
Preheat oven to 425°F (220°C) or heat grill to medium-high.
Parboil potatoes for 5–7 minutes in salted water until just starting to soften. Drain well.
Season everything:
In a large bowl, combine steak cubes, potatoes, olive oil, butter, garlic, salt, pepper, and Italian seasoning. Toss to coat well.
Assemble packets:
Cut 4 large pieces of heavy-duty foil.
Divide steak and potatoes evenly among the foil sheets.
Fold up the sides and seal tightly to form packets.
Cook:
Oven: Place packets on a baking sheet and bake for 20–25 minutes until steak is cooked to your liking and potatoes are tender.
Grill: Cook packets directly on grates for 10–12 minutes per side.
Serve:
Carefully open packets (steam will be hot). Garnish with fresh parsley and serve immediately.

Add sliced onions, bell peppers, or mushrooms to the packets.
Swap butter for garlic-herb compound butter for extra richness.
Finish with a sprinkle of Parmesan cheese before serving.
