Instructions
Preheat oven
Heat to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare potatoes
In a large bowl, toss potatoes with olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper until well coated.
Roast
Spread potatoes in a single layer on the baking sheet.
Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.
Serve
Sprinkle with fresh parsley and serve warm.
Tip: For extra crispiness, soak the potato wedges in cold water for 20 minutes, then pat dry before seasoning.
