Cook the potatoes
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
Add the potatoes, season with salt, pepper, and half the Italian seasoning.
Cook for 12–15 minutes, stirring occasionally, until golden brown and tender. Remove and set aside.
Cook the steak
Season steak cubes with salt, pepper, and the remaining Italian seasoning.
Add 1 tbsp olive oil to the skillet. Sear steak for 3–4 minutes, until browned on all sides but still juicy inside.
Combine with garlic butter
Reduce heat to medium. Add butter and garlic to the skillet, stirring until fragrant.
Return potatoes to the skillet, tossing everything together in the garlic butter.
Finish and serve
Sprinkle with fresh parsley and serve hot.
Tip: For extra flavor, squeeze fresh lemon juice over the finished dish or top with shredded Parmesan.
