1. Prepare the Potatoes:
Preheat oven to 425°F (220°C).
Boil baby potatoes in salted water for 15–20 minutes, until fork-tender. Drain well.
Line a baking sheet with parchment paper. Arrange potatoes, and gently smash them with the back of a glass or potato masher.
Drizzle with olive oil and melted butter. Sprinkle with garlic powder, salt, and pepper.
Bake for 20 minutes, flip, and bake another 10 minutes until crispy.
Remove from oven, sprinkle with shredded cheese, and bake for an additional 5 minutes, until cheese is melted and bubbly.
2. Cook the Steak Bites:
Pat steak cubes dry with paper towels and season generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add steak in a single layer (cook in batches if needed). Sear for 2–3 minutes per side until browned and cooked to desired doneness. Remove from pan and set aside.
Lower heat to medium, add butter and garlic to the skillet. Cook for 30 seconds, stirring constantly.
Return steak bites to skillet and toss in the garlic butter. Sprinkle with red pepper flakes and parsley.
3. Serve:
Plate the garlic butter steak bites with a side of cheesy smashed potatoes.
Garnish with extra parsley or chives.
Tips for Success
Use room temperature steak for an even sear.
Don’t overcrowd the skillet or the steak will steam instead of sear.
For extra flavor, add a splash of soy sauce or Worcestershire sauce to the garlic butter.
