FRIED POTATOES AND ONIONS

Instructions

Prep the potatoes:
Wash, peel, and slice the potatoes into thin rounds (about ⅛ inch thick). Pat them dry with a paper towel — this helps them crisp up better.

Heat the pan:
Heat oil or butter in a large skillet (preferably cast iron) over medium heat.

Add potatoes:
Spread the potatoes evenly in the pan. Let them cook without stirring for 4–5 minutes, so they start to brown on one side.

Add onions:
Add the sliced onions on top. Stir gently to combine. Continue cooking for 15–20 minutes, stirring occasionally, until the potatoes are golden brown and tender, and the onions are caramelized.

Season and serve:
Sprinkle with salt, pepper, and any optional seasonings. Serve hot.

Tips

Don’t overcrowd the pan — cook in batches if needed for better crispiness.

For extra flavor, add diced bacon or sausage before the potatoes.

You can also add bell peppers for a Southern-style variation.
