Instructions
Cook bacon:
In a large skillet or Dutch oven over medium heat, cook bacon until crispy.
Use a slotted spoon to remove bacon to a paper towel–lined plate, leaving the rendered fat in the skillet.
Sauté onion & garlic:
Add diced onion to the skillet and cook until softened, about 5 minutes.
Stir in garlic and cook for 1 minute, being careful not to burn it.
Add cabbage:
Stir chopped cabbage into the skillet, coating it in the bacon drippings.
Season with salt, pepper, smoked paprika, and red pepper flakes if using.
Cook until tender:
Reduce heat to medium-low and cook, stirring occasionally, until cabbage is tender and lightly caramelized, 10–12 minutes.
Finish & serve:
Stir the crispy bacon back into the cabbage.
Taste and adjust seasoning as needed. Serve hot.
Tips & Variations:
Add a splash of apple cider vinegar for tang.
Toss in cooked kielbasa slices for a complete meal.
Use purple cabbage for a colorful twist.
