Ingredients (Serves 6)
For the Onions
2 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
½ tsp salt
1 tsp sugar (optional, for faster caramelization)
½ tsp dried thyme (or fresh thyme sprigs)
¼ cup beef broth
For the Meatloaf
1 kg (2 lbs) ground beef (80/20 for best flavor)
2 eggs
¾ cup breadcrumbs (or crushed crackers)
½ cup milk
½ cup caramelized onions (from above)
2 tsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
1 tsp Dijon mustard (optional, for depth)
For the Topping
1 cup shredded Gruyère or Swiss cheese (or mozzarella for milder flavor)
Remaining caramelized onions
