Instructions
Cook the pasta according to package directions until al dente. Drain and set aside.
Season & sear the chicken. In a large skillet, heat olive oil. Season chicken with Italian seasoning, paprika, salt, and pepper. Cook until golden brown and cooked through, then remove from skillet.
Make the sauce. In the same skillet, sauté garlic until fragrant. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
Add flavor. Stir in Parmesan, sun-dried tomatoes, and spinach. Simmer until spinach wilts and sauce thickens.
Bring it all together. Slice chicken and return it to the skillet along with the pasta. Toss everything to coat in the creamy sauce.
Serve hot, garnished with parsley and extra Parmesan if desired.
