Fajita Chicken Casserole

Preparation

Preheat oven to 190 °C / 375 °F.

Prepare the veggies
In a skillet, heat olive oil. Add sliced peppers and onions. Cook 4–5 minutes until slightly softened. Stir in the fajita seasoning.

Mix the casserole base
In a large bowl, combine the cooked chicken, sautéed peppers and onions, sour cream, and salsa. Mix well.

Assemble
Spread the mixture evenly in a greased baking dish. Top generously with shredded cheese.

Bake
Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.

Serve
Garnish with fresh cilantro and serve with lime wedges. Delicious with rice, tortillas, or a fresh salad.
