Instructions:

In a bowl, toss potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Spread them in a baking dish and roast for 15 minutes.

Meanwhile, season chicken with salt, pepper, and Italian seasoning. In a skillet, heat 2 tbsp olive oil, sear chicken for 3–4 minutes per side until golden, then set aside.

In the same skillet, melt butter and sauté garlic for 30 seconds. Stir in heavy cream and Parmesan until smooth and creamy.

Add the seared chicken and roasted potatoes to the sauce. Transfer to the oven and bake for 20 minutes, or until chicken is cooked through and sauce is bubbling.
