Prepare the sauce
In a bowl, whisk together the cream soups, sour cream, chicken broth, garlic powder, and thyme.
Layer in the crockpot
Place chicken breasts in the bottom of the slow cooker.
Season lightly with salt and pepper.
Pour half of the soup mixture over the chicken.
Sprinkle the dry stuffing mix evenly on top.
Pour the remaining soup mixture over the stuffing.
Add onions (optional)
Scatter diced onion on top for extra flavor.
Cook
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
Serve
Fluff the stuffing slightly with a fork and serve hot with vegetables, mashed potatoes, or a fresh salad.
Tip: If you like a slightly crispier stuffing, prop the lid open during the last 30 minutes of cooking, or transfer the stuffing layer to a baking dish and broil for a few minutes.
