1. Preheat Oven

Spread potatoes in a single layer on the baking sheet, cut side down for maximum crispiness.
Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.
5. Garnish & Serve
Sprinkle with fresh parsley and a little extra Parmesan before serving.
Tips for Extra Crispiness
Soak cut potatoes in cold water for 20 minutes, then pat dry before seasoning.
Use a hot baking sheet (preheat in oven) for an extra crunch.
