Instructions
Prep:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Mix coating:
In a large bowl, combine olive oil, Parmesan, garlic powder, paprika, salt, and pepper.
Coat potatoes:
Add the halved potatoes to the bowl and toss until evenly coated. Make sure the cut sides are well covered with the Parmesan mixture.
Arrange & roast:
Place potatoes cut-side down on the baking sheet.
Roast for 30–35 minutes, until the bottoms are golden brown and crisp.
Serve:
Sprinkle with fresh parsley before serving for color and freshness.
Tip: For extra crunch, preheat your baking sheet in the oven before adding the potatoes. This gives you that restaurant-level crispy bottom.
