Crispy Baked Chicken with Cheesy Broccoli & Creamy Potatoes

Instructions
1. Prepare the Chicken

Preheat oven to 400°F (200°C).

Mix panko, Parmesan, paprika, garlic powder, salt, and pepper in a bowl.

Dip chicken breasts in beaten egg, then coat with breadcrumb mixture.

Place on a greased baking sheet, drizzle lightly with olive oil or melted butter.

Bake for 20–25 minutes, then sprinkle mozzarella on top and broil for 2–3 minutes until golden and bubbly.

2. Make the Cheesy Broccoli

Steam or blanch broccoli until just tender (about 4 minutes).

In a saucepan, melt butter and sauté garlic.

Add cream, bring to a simmer, then stir in cheddar until melted.

Pour cheese sauce over broccoli and toss.

3. Make the Creamy Potatoes

Boil potatoes in salted water until fork-tender, then drain.

In a large bowl, mix sour cream, mayonnaise, onion powder, garlic powder, salt, and pepper.

Stir in potatoes and cheese until creamy and coated.

4. Serve

Plate the crispy baked chicken, creamy potatoes, and cheesy broccoli together for a hearty, comforting meal.

Tip: Add crushed red pepper flakes or a little hot sauce to the broccoli cheese sauce if you like a spicy kick.
