Prep Chicken: Pat chicken dry, season with salt and pepper.
Sear: Heat olive oil in a large skillet over medium-high. Sear chicken 3–4 minutes per side until golden and cooked through. Transfer to a plate.
Make Sauce: In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds. Pour in chicken broth, scraping up brown bits. Stir in cream, Parmesan, and Italian seasoning. Simmer 2–3 minutes until slightly thickened.
Combine: Return chicken to skillet, spoon sauce over top, and add spinach if using. Simmer 1–2 minutes until spinach wilts.
Serve: Plate chicken with sauce over pasta, rice, or alongside crusty bread.
Tip: Double the sauce if you love extra creaminess — it’s amazing for dipping bread or spooning over vegetables.
