Add boiling water:
Stir in boiling water until a thick batter forms. Let it rest for 2–3 minutes. -
Add milk and butter:
Stir in milk and melted butter until smooth. The batter should be thick but spoonable. -
Cook the Johnnycakes:
Heat a cast-iron skillet or griddle over medium heat. Add a bit of butter or oil.
Spoon about 2 tablespoons of batter per cake, flatten slightly, and cook 2–3 minutes per side until golden brown and crisp. -
Serve hot:
Enjoy warm with butter, honey, maple syrup, or alongside savory dishes like fried fish or greens.
