Instructions

  1. Mix dry ingredients:
    In a bowl, combine cornmeal, salt, sugar, and baking powder (if using).

  2. Add boiling water:
    Pour boiling water into the mixture, stirring until thick. Let sit 2–3 minutes.

  3. Add milk and butter:
    Stir in milk and melted butter to form a smooth batter. It should be thick but pourable.

  4. Cook:
    Heat a lightly greased skillet over medium heat. Drop 2 tablespoons of batter per cake, flatten slightly, and cook for 2–3 minutes per side until golden and crisp.

  5. Serve:
    Enjoy warm with butter and syrup for a sweet version or alongside savory dishes like sausage or collard greens.


Tip:
For extra flavor, add a pinch of smoked paprika or diced jalapeños to the batter.
