Prepare the filling: In a large bowl, toss sliced apples with sugars, flour, cinnamon, nutmeg, salt, and lemon juice. Let sit for 10–15 minutes to draw out the juices.

Assemble the pie: Roll out one pie crust and place it into a 9-inch pie dish. Spoon the apple mixture into the crust and dot with butter.

Top crust: Place the second crust on top, seal and crimp the edges, and cut slits for steam. Alternatively, make a lattice pattern.

Brush and bake: Whisk together the egg and milk; brush the top crust lightly. Bake at 400°F (200°C) for 45–50 minutes, until the crust is golden and the filling is bubbling.

Cool and serve: Let the pie cool for at least 2 hours before slicing to allow the filling to set.
