Prep bologna: Cut the bologna into chunks and pulse in a food processor until finely chopped (almost like a coarse spread). If you don’t have a processor, finely mince by hand.
Mix dressing: In a large bowl, combine mayonnaise, mustard, relish, and onion. Stir until smooth.
Combine: Fold in the chopped bologna (and eggs, if using). Mix until everything is evenly coated.
Season: Taste and adjust with salt and pepper as needed.
Chill: Cover and refrigerate for at least 1 hour to let the flavors meld.
Serve: Spread on bread for sandwiches, or serve with crackers and veggie sticks.
