Preheat oven
Preheat to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
Prepare the base
Spread the canned (or homemade) chili evenly on the bottom of the dish.
Scatter sliced hot dogs over the chili layer.
Add cheese
Sprinkle cheddar cheese on top of the hot dogs.
Mix cornbread batter
In a bowl, combine cornbread mix, egg, milk, and seasonings (if using). Stir until just combined.
Top the casserole
Pour the cornbread batter evenly over the chili, hot dogs, and cheese. Spread with a spatula if needed.
Bake
Bake uncovered for 25–30 minutes, or until cornbread is golden brown and cooked through (check with a toothpick).
Serve
Let cool slightly before serving. Add toppings like sour cream, jalapeños, or chopped green onions if desired.
Tip: For a heartier meal, stir some corn kernels or diced jalapeños into the cornbread batter before baking.
