Instructions
Preheat oven: Set to 375°F (190°C).
Season & sear chicken: Pat chicken dry, season with salt and pepper. In a large oven-safe skillet, heat olive oil over medium-high heat and sear chicken 2–3 minutes per side (it will finish cooking in the oven). Remove from skillet.
Make mushroom sauce: In the same skillet, melt butter. Add mushrooms and sauté until browned, about 5 minutes. Stir in garlic and cook 30 seconds. Add spinach and cook until wilted.
Add cream & seasoning: Pour in heavy cream, chicken broth, and Italian seasoning. Stir and simmer 2–3 minutes.
Assemble bake: Return chicken to skillet, spoon sauce over top, and sprinkle with mozzarella and Parmesan.
Bake:
Transfer skillet to oven and bake 20–25 minutes, until chicken is cooked through (165°F/74°C internal temp) and cheese is bubbly.
Serve: Enjoy hot with pasta, rice, or bread.
