Instructions:
Preheat oven to 400°F (200°C).
Season the chicken: Pat drumsticks dry, then rub them with olive oil, paprika, garlic powder, salt, and pepper.
Prepare the potatoes: In a large bowl, toss the potato chunks with olive oil, minced garlic, oregano, salt, and pepper.
Assemble in baking dish: Place the seasoned potatoes in a large baking dish or roasting pan. Nestle the drumsticks on top and scatter onion slices around if using.
Add liquid: Pour chicken broth (or water) into the pan—this helps the potatoes cook soft and soak up flavor.
Bake: Cover the dish loosely with foil and bake for 35–40 minutes. Remove foil, then continue baking another 20–25 minutes, or until chicken is golden brown and cooked through (internal temp 165°F / 74°C) and potatoes are tender.
Serve: Garnish with fresh parsley and enjoy warm.
