Chicken and Potatoes with Garlic Parmesan Cream Sauce

Instructions

Prep oven: Preheat to 400°F (200°C).

Season chicken & potatoes: Toss potatoes in olive oil, paprika, Italian seasoning, salt, and pepper. Season chicken generously on both sides.

Sear chicken:

In a large oven-safe skillet, sear chicken skin-side down over medium-high heat for 3–4 minutes until golden. Flip and cook another 3 minutes. Remove and set aside.

Roast: Arrange potatoes in the skillet. Place chicken on top and roast in the oven for 25–30 minutes, until chicken is cooked through (165°F internal temperature) and potatoes are tender.

Make sauce:

In a saucepan, melt butter over medium heat. Add garlic and sauté 30 seconds. Whisk in flour and cook for 1 minute. Slowly whisk in broth, then cream. Simmer until slightly thickened. Stir in Parmesan and Italian seasoning. Season with salt and pepper to taste.

Combine:

Pour sauce over chicken and potatoes, or serve on the side. Garnish with parsley.

Serve immediately: Best enjoyed hot, with extra bread to soak up the sauce.
