Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin.

In a bowl, mix: mashed potatoes, egg, shredded cheese, parmesan, melted butter, chives, garlic powder, salt, and pepper.

Scoop the mixture into each mini muffin cup (fill about ¾ full).

If you want a melty center: press a tiny cube of cheese into each and cover with a little potato.

Bake 20–25 minutes, or until the tops are golden and edges are crisp.

Let cool 5 minutes, then pop them out and serve warm.
