Cheesy Mashed Potato Puffs

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin.

  2. In a bowl, mix: mashed potatoes, egg, shredded cheese, parmesan, melted butter, chives, garlic powder, salt, and pepper.

  3. Scoop the mixture into each mini muffin cup (fill about ¾ full).

  4. If you want a melty center: press a tiny cube of cheese into each and cover with a little potato.

  5. Bake 20–25 minutes, or until the tops are golden and edges are crisp.

  6. Let cool 5 minutes, then pop them out and serve warm.


Serving Ideas

  • Dip in sour cream or ranch

  • Serve as a side with chicken or steak

  • Top with bacon bits, extra chives, or a drizzle of garlic butter
