Instructions:

Cook the chicken:
In a large pot, heat olive oil over medium heat. Add chicken and 1 tsp Cajun seasoning; cook until browned and cooked through. Remove and set aside. -
Sauté vegetables:
In the same pot, add onion, bell pepper, and garlic. Sauté 3–4 minutes until softened. -
Combine:
Add chicken back to the pot, then stir in white beans, corn, green chiles, chicken broth, remaining Cajun seasoning, cumin, salt, and pepper. -
Simmer:
Bring to a gentle simmer and cook for 15–20 minutes to allow flavors to blend. -
Add cream:
Stir in heavy cream and simmer another 5 minutes. Adjust seasoning if needed. -
Finish & serve:
Squeeze in lime juice for brightness, and garnish with cilantro or green onions. Serve warm with cornbread or crusty bread.
