Cajun Chicken Bites over Creamy Cheesy Rigatoni

Instructions

1. Cook the Rigatoni

Boil the pasta in salted water until al dente.
Drain and set aside (save ½ cup pasta water if needed to loosen sauce).


2. Make the Cajun Chicken Bites

In a bowl, season chicken pieces with Cajun seasoning, garlic powder, salt, and pepper.
Heat olive oil and butter in a skillet.
Sear chicken on medium-high heat until browned and cooked through, about 6–8 minutes.
Remove from skillet and set aside.


3. Make the Creamy Cheesy Sauce

In the same pan, melt 1 tbsp butter.
Add garlic and cook 30 seconds.
Pour in heavy cream and chicken broth.
Simmer until slightly thickened.
Stir in mozzarella and Parmesan until melted and smooth.
Season with salt, pepper, and a small pinch of Cajun seasoning if you want more heat.


4. Combine

Add the cooked rigatoni to the cheese sauce and toss to coat.
If too thick, add a splash of pasta water.
Top with the Cajun chicken bites.


5. Serve

Plate the creamy rigatoni and pile the seasoned chicken bites over the top.
