Preheat oven to 350°F (175°C).

In a skillet, cook the ground beef with onion until browned. Drain if needed.

Add garlic and taco seasoning; stir in beans and optional rice. Heat through.

Warm the tortillas so they’re easier to roll.

Fill each tortilla with the meat mixture and some cheese. Roll tightly.

Place the burritos seam-side down in a baking dish.

In a bowl, mix enchilada sauce, sour cream, and a handful of cheese to make the sauce.

Pour the sauce evenly over the burritos.

Sprinkle more cheese on top.

Bake uncovered for 20–25 minutes or until hot and bubbly.
