1 head broccoli, chopped
1 onion, diced
2 garlic cloves, minced
4 cups vegetable broth
Salt and pepper to taste
Optional: some cream or grated cheese for extra creaminess
Instructions:
In a large saucepan, sauté the diced onion and chopped garlic until fragrant.
Add the chopped broccoli to the pot and cook for a few minutes until slightly soft.
Pour in the vegetable broth and bring the mixture to a boil.
Cook the soup for about 15 to 20 minutes or until the broccoli is tender.
Using a hand blender or a normal blender, puree the soup until smooth.
Season with salt and pepper to taste and add a little cream or grated cheese to taste.
