Preparation
Cook the bacon
In a large skillet or pot, cook the bacon over medium heat until crisp. Remove with a slotted spoon and set aside, leaving a little bacon fat in the pan.
Brown the beef
Add the ground beef, onion, and garlic to the same pan. Cook until the beef is browned and onions are softened. Drain excess grease if necessary.
Add rice and broth
Stir in the rice, beef broth, ketchup, mustard, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 18–20 minutes, until the rice is tender and liquid is absorbed.
Finish with cheese & bacon
Stir in the shredded cheddar cheese and reserved bacon. Mix until creamy and cheesy.
Serve
Garnish with extra cheese and sliced green onions. Serve hot.
Variations
Add chopped pickles for a true cheeseburger twist.
Top with shredded lettuce and diced tomatoes after cooking for a “loaded” version.
Use pepper jack cheese for a spicy kick.
