Bacon Cheeseburger Meatloaf

Instructions
Prep oven:

Preheat oven to 350°F (175°C).

Line a baking sheet with foil or parchment paper for easy cleanup.

Mix meatloaf base:

In a large bowl, combine ground beef, breadcrumbs, cheese, onion, eggs, milk, ketchup, mustard, garlic powder, onion powder, salt, and pepper.

Mix gently until just combined (do not overmix or meatloaf can be tough).

Shape loaf:

Form the mixture into a loaf shape on the prepared baking sheet.

Add bacon:

Lay bacon slices over the top of the loaf, slightly overlapping them.

Top & bake:

Brush a thin layer of ketchup over the bacon for a glossy finish.

Bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).

Rest & serve:

Let meatloaf rest for 10 minutes before slicing.

Tips & Variations:

Swap cheddar for pepper jack for a spicier kick.

Spread a thin layer of BBQ sauce instead of ketchup for smoky sweetness.

For extra gooey cheese, stuff the center of the loaf with cheese cubes before baking.
