Ingredients
For the Crust:
3¾ cups (470g) all-purpose flour
1½ tablespoons sugar
1½ teaspoons table salt
3 sticks (12 oz or 340g total) unsalted butter, cold and cut into small pieces
¾ cup very cold water
For the Apple Filling:
3½ to 4 pounds apples (about 10 cups), peeled, cored, and chopped into ½-inch pieces
Juice of ½ lemon (to prevent browning)
⅔ to ¾ cup sugar (adjust based on apple sweetness)
3 tablespoons cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon salt
To Finish:
2 tablespoons heavy cream or
1 beaten egg mixed with 1 tablespoon water (for egg wash)
