Mini Beef Wellingtons

Ingredients (makes 6–8 minis)

For the beef

  • 1 lb beef tenderloin, cut into 6–8 small medallions

  • Salt and pepper

  • 2 tbsp olive oil

  • 1–2 tbsp Dijon mustard

Mushroom duxelles

  • 8 oz mushrooms, very finely chopped

  • 1 small shallot (or ¼ onion), minced

  • 2 cloves garlic, minced

  • 2 tbsp butter

  • 1 tsp thyme

  • Salt and pepper

Assembly

  • 1 sheet puff pastry, thawed

  • 4–6 slices prosciutto (optional but traditional)

  • 1 beaten egg (for egg wash)
