Blueberry Cheesecake Recipe

Ingredients

For the crust:

200 g (about 2 cups) graham cracker crumbs or digestive biscuits

100 g (7 tbsp) unsalted butter, melted

2 tbsp sugar

For the filling:

500 g (about 2 cups) cream cheese, softened

200 g (1 cup) sugar

200 ml (¾ cup) sour cream

3 eggs

1 tsp vanilla extract

2 tbsp all-purpose flour (optional, helps stability)

For the topping:

250 g (2 cups) fresh or frozen blueberries

2 tbsp sugar

1 tbsp lemon juice

1 tsp cornstarch + 2 tbsp water (to thicken)
