1 whole turkey (10–14 lbs / 4.5–6.5 kg), thawed if frozen
½ cup (1 stick / 115 g) unsalted butter, softened
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme leaves
2 tbsp fresh parsley, chopped
1 tbsp fresh sage, chopped
1 lemon, halved
1 onion, quartered
2 carrots, cut into chunks
2 celery stalks, cut into chunks
2 cups chicken or turkey broth
